Peanut Butter Icing

Peanut Butter Icing is my absolute favourite icing.  Every time I make it I end up eating a ridiculous amount of it off the spoon.  Top a chocolate cupcake in it and I’m in heaven. Goodbye healthy eating, hello elastic waisted pants…and I’m ok with that…. when I am in the presence of this particular icing.  If you love Peanut Butter, give this a try. In my personal opinion, it is worth every calorie.

  • 1/3 cup vegetable shortening
  • 1/3 cup softened salted butter
  • 3/4 cup smooth peanut butter
  • 3.5 cups confectioner’s (icing) sugar
  • 3-4 tablespoons cream (or milk).
  • 1 teaspoon pure vanilla extract

Cream the shortening and butter with electric mixer until smooth. Add peanut butter and vanilla.  Mix until well combined.  Gradually add sugar, 1/2 cup at a time. Mix well on medium speed.  Make sure to scrape the bottom and sides of the bowl often.  Add cream or milk, one tablespoon at a time, mixing at medium speed until the icing is light and fluffy.

If you aren’t using the icing right away, cover the bowl with a damp cloth.  This icing can be stored for 2 weeks in a sealed container in the refrigerator. Make sure to re-whip before use…or just eat it with a spoon like I do LOL.

** I usually double the recipe…we like a lot of icing on our cake…and I need to make up for the amount I accidentally eat during the process.  I hope you like it as much as I do.
